Bauer and his food team at the Chron decided to task a trio of very different Fillmore Street chefs — Matthew Accarrino of SPQR, David Lawrence of 1300 on Fillmore, and Anjan Mitra of Dosa — to make a meal using the same five summer ingredients: halibut, corn, tomatoes, arugula, and Bauer’s curveball, okra. Lawrence was happy to make a familiar southern succcotash with the corn, tomatoes, and okra, while Mitra made okra chips to go with his halibut and arugula curry. Accarrino struggled a bit with the okra, saying that his old boss Colicchio hated it, “So I’ve rarely used it.” Ultimately, he made the notoriously slimy vegetable into a relish to go with his halibut cheek cakes.
