
It’s popping up more and more on cocktail menus, and Suzanne Miller, bar manager at DOSA Fillmore, provides a concise explanation of the relatively new (but actually very old) spirit known as Bols genever. It’s a precursor to gin made with malt wine and spirit, and Bols decided to go back to their 1820s recipe for genever and re-release it to the public starting in 2007. In this video, Miller explains a bit more about it, and uses it to make one of her house cocktails: the Beet Box.
