Roy’s, the national Hawaiian-fusion chain, closed its Philly location yesterday, according to the Insider. The space, which is owned by Union Trust investor and developer Joe Grasso, will be transformed into a new unnamed restaurant. Ed Doherty, who operates Union Trust, is spearheading the project. Initial plans include extending the bar, making it the space’s focal point and building out a new raw bar. The opening is slated for next year. [Insider]
