Not One, But Two Chefs Flee the Kitchen at Quince

An informant told Grub Street over the weekend that Friday was the last night for Quince chef de cuisine Thomas Lents. He leaves the operation after only about a year working under executive chef/owner Michael Tusk, and it sounds like he will be returning to his former job at The Mansion in Las Vegas. Also leaving Quince in a potentially related departure over the weekend (though how they’re related we’re not sure) is executive pastry chef Joel Reno, who steps down after only six months. We’ll need to wait to hear from Joel where he might be heading, and if it will be back to Chicago where he left a five-year post at Everest.
