Finally, New Amsterdam Gets a Dutch Gin Bar

Just a couple of weeks after we joked about a lack of Dutch food here in town and David Wondrich lamented the lack of Dutch dram shops around the country, Diner’s Journal reports that Clover Club alum and Mayahuel partner Katie Stipe is opening a genever bar called Vandaag. Looks like she beat partner Ravi DeRossi to that gin bar. Grub Street favorite Phillip Kirschen-Clark will be in the kitchen preparing bitterballen, hete bliksem, and guinea hen. Wondrich notes that the way to drink Dutch-style gin is with a beer back — so that’s where those hipster recession specials came from.
