What to Drink at Prospect, Opening Next Week

Ravi Kapur’s food menu remains tightly under wraps, but today we get a glimpse of the cocktail program at the Boulevard team’s new venture, Prospect (300 Spear Street). Bar manager Brooke Arthur said earlier that she wanted to offer some lower alcohol, food-friendly cocktail options in addition to the balanced, bright, and seasonal drinks that became her signature at Range.

As Alcademics points out, the opening list (which is, obviously, subject to change), has “a nice balance between lower-alcohol drinks (Central City, Bitter Guiseppe), girlie drinks (Candace, The Whaler, Classy Lassy), and macho drinks (Catcher in the Rye, Stallion, Prospector).” We would argue that the Whaler is more of a unisex choice, appealing to urbane masculine and feminine tastes (like Vanity Fair), but we digress.

Also, there’s at least one former special from the Range menu that has made its way here: The Vicious Circle.

(Where noted below, another bartender developed the recipe.)
