After turning Church and State into one of Downtown’s hottest tables last year then leaving it behind, fanatic diners have been rumbling about the direction Walter Manzke will go in for his solo project. The chef just unveiled a menu for his one-night guest-stint tomorrow at BreadBar and while it might give some clues as to what’s on his mind, it could just as likely add more questions given its breadth. Rather than focusing on one style, Manzke is going global on a menu titled “Around the World in Eight Dishes,” encompassing everything from Mexican ceviche to pig’s feet banh mi-style sliders, English pea ravioli, Japanese dessert, and not surprisingly, two French dishes. Manzke will be backed by Neve Luxury Ice founder Michel Dozois and sommelier Adam Vourvoulis, who have four summer cocktails planned. Whether or not this is the direction Manzke will head for his own restaurant isn’t being revealed, but while you dream about his return to a kitchen near you, look below to review the full menu for his pop-up tomorrow night at BreadBar.
