Palermo Bakery Expands to Old Town

It’s been an impressive few months of bakery openings, what with Floriole Café and Bakery already open and La Boulangerie on the way. Now Chicago Magazine reveals that Palermo Bakery, which already has two locations, is taking over the space of a Cold Stone Creamery in Old Town. The Sicilian Bakery will offer the same assortment of baked goods and cannoli, with one noticeable difference. The Old Town location will be the first to offer gelato. Talking to Chicago Magazine, owner Paula Greco said that it is planning to open by July 4, “if all goes well, which it probably won’t.” You have to admire the honesty. [Chicago Magazine]
