Jim Burke, chef and owner of Bella Vista’s James, has given his menus a makeover for summer. The new dishes will make their debut tonight. Some of the new menus’ highlights include live scallop crudo, with summer truffle, stuffed zucchini flowers and yuzu, chilled cucumber-avocado soup, with Hawaiian blue prawn escabeche and chili oil, and wild king salmon, bathed in extra virgin olive oil, fresh porcini en brodo, bulls blood chard and golden zucchini.
