First, the bad news: Grahamwich is delayed again. The rumored Mid-July opening now looks more like early August. Permits and the city are being blamed again. We’d be kind of depressed about all this had Chicago Magazine not squeezed out a few details about the upcoming sandwich spot. It looks to be as wild as we imagined.

As the logo gave away a few months ago, sandwiches, soda, popcorn, and ice cream are all accounted for. The actual sandwiches aren’t set in stone, but there will be eight of them. They’ll be served with various sides including truffle popcorn, which is already on the menu at Graham Elliot. As for the soft serve, there will be two options that will change seasonally. Bowles told Chicago that the soft serve, “will be more along the lines of a composed dish, as opposed to [the kind where you] add your silly sprinkles and crap on top.”

Perhaps the most interesting detail is that there will be four homemade sodas. It’s not exactly difficult to make your own syrup for sodas, but it is hard to make them taste good. If anyone can do it right, we imagine Bowles is the one.
