Big changes are happening over at CAV Wine Bar, where exec chef John Maher is on his way out as of July 6. The Scoop reports the surprising news, which comes just six weeks after Bauer blessed the place with three stars for the food. Apparently owner Pamela Busch is scrapping the entire food menu (save the cheese and charcuterie) in favor of more of straight-ahead wine bar and retail operation. No word on Maher’s next move, but we’re guessing with that review under his belt at the French Laundry on the résumé that he’ll be landing somewhere very soon.
