Aaron Deal is out.
Talk of Aaron Deal has come up often in the past few weeks, whether it was about a bet with Phillip Foss or being picked as one of Chicago’s top singles. But we can definitely say we didn’t see this coming. According to Chicago Magazine, the chef has been replaced at the Custom House by Perry Hendrix, who is coming from Brasserie by Niche in St. Louis. Peter Drohomyrecky, one of the partners at the Custom House, told Chicago that, “The major issue we had with Aaron is that we couldn’t get Aaron to deliver a menu that matched our concept.” No word yet if Deal will stay in Chicago.
