Ilan Hall and chef de cuisine Luke Reyes are introducing “Tasting Tuesdays” to The Gorbals tonight, with a $30 menu of four courses and ten-dollar wine-pairing option. A menu is not yet available as the restaurant tells us no one has any idea “what they’re cooking until 2 hours prior to opening.” But there will be a la carte items like the bacon-wrapped matzoh, as well as vegetarian options, which must become popular when squeamish diners are faced with Hall’s sweetbreads and oxtail buns. The twosome have supposedly just returned from a morning trip to the farmer’s market, where they’ve loaded up on ingredients to prepare with a local sea bass and fresh pasta tonight, followed by a chocolate dessert. Knowing Hall’s inclination to challenge and thrill himself and his audience equally, expect the impromptu menus to cover a range of influences and, quite likely, internal organs. No surprise, we’re told the main course will be “Jewish-inspired, but definitely not Orthodox.” Dinner starts at 6:00 P.M. at 501 South Spring Street. Downtown. 213-488-3408.
