Slow Coffee Hits Boylston ‘Pavement’

Pavement Coffeehouse, the new Fenway coffee shop from the folks behind Bagel Rising and Espresso Royale, soft opens tomorrow, reports Thrillist. The coffee house, originally slated to open in November, offers the group’s signature kettle-boiled bagels topped with everything from bacon, cheddar, and tomato to avocado, sprouts, tofu, and Swiss cheese. The big thing here, though, is the coffee: every bean was grown within the past ten months and roasted within a day of arrival at Pavement. There’s even a slow bar, complete with hand-dripped espresso drinks. It remains to be seen whether Pavement will attract the same sort of obsessive adoration as Espresso Royale, but with a location that close to Berklee and Boston Conservatory, we’re betting business will be brisk.
