Chefs Shuffle at Flora, Fish & Farm

Chef Chris Dettmer, who most recently served as chef de cuisine under Chris Kostow at the newly four-starred Meadowood, is taking the helm at Oakland’s Flora by month’s end. As the Scoop is reporting, owners Dona Savitsky and Thomas Schnetz are also starting construction on a new project next door: Xolo, a Mission-style taqueria, slated for a mid-summer opening.

Also headlining the Scoop this week, Fish & Farm exec chef Chad Newton says “it’s time to move on,” and he’s moving on with former Fish & Farm owner Frank Klein in order to design menus and such for two new ventures: Parcel BBQ and American Box. Neither restaurant has a location yet, but Newton is most excited about bringing SF a new spin on BBQ. “”There’s not a lot of really simple, sticky-finger barbecue in the city, and no one’s really approaching it from an ingredient-driven, product-conscious point of view.” So, don’t expect another Wexler’s, in other words.

As for F&F;, Ix Bed Yah, Newton’s longtime right-hand man, is taking the exec slot.
