Icelandic chef Thorarinn Eggertsson will spend a week cooking at Rustic Kitchen as part of the Taste of Iceland festivities. Eggertsson’s Reykjavik restaurant Orange is known for its blend of molecular gastronomy with traditional Icelandic cuisine and, while in Boston, he’ll be focusing on the Hub’s common denominator with Iceland: seafood. Think salmon with basil and potato purees and fruit salad, langoustine and caulflower topped with a quail egg and shellfish asparagus foam, and jiavara mousse. Eggertsson’s dishes will be available as part of Rustic Kitchen’s menu from March 11-17.
