The Willows in Salem are taking a cue from the Common’s Pink Palace by transforming a former bathroom into a restaurant. Swampscott’s Endless Summer Grilling is the leading contender, reports the Salem News. Endless Summer owner (and former Pho Republique executive chef) Patrick DeBoever would like to serve Caribbean-influenced slow-cooked barbecue like beef, chicken, and pulled pork. Endless Summer’s application still needs approval from the Salem Parks & Recreation Commission, but if all goes well, it could open within the year.
