How Does Randy Zwieban Really Feel About Province’s LEED Certification?

Randy Zwieban’s sleek West Loop restaurant Province sent out a gleeful PR missive this morning, crowing about their newly-acquired LEED-CI Gold certification, which places them in the upper echelons of sustainable Chicago dining. “We wanted to find a way to be environmentally correct and green, not just say we are,” Zwieban is quoted as saying in the release.

We feel that, really, and commend both him and the restaurant for their commitment to renewable materials, composting, and putting the kibosh on un-green things like bottled beers. But is Zwieban’s heart really in it? “If he had to do it again, [Zwieban] would not have gone through the Leed process because of time & cost,” twitter-quoted Chicago Bites from the Family Farmed Expo last weekend. Oh well, now that it’s done it makes for an awfully pretty PR soundbite. [RIA; @ChicagoBites]
