MIT’s Clover Food Lab’s slogan, “Everything will be different tomorrow,” is about to take on a whole new meaning. The truck is looking to open a brick and mortar outpost in Harvard Square, reports Boston Restaurant Talk. Though Clover’s proposal to open at 7 Holyoke Street will need to undergo a public hearing before it’s approved, this could be a very exciting development for locavores who want to eat their chickpea fritters and pear and parsnip soup indoors.
Unsurprisingly, the media-savvy truck is chronicling the process on its blog. So far, they’ve revealed that “We’re doing our best to build for testing and flexibility (e.g., equipment on casters). And we’ve learned a few things from the truck. Let’s just say we’re preparing for lines.”
