Walter Manzke Will Leave Church & State; Anisette’s Joshua Smith Taking Over

Having created one of Los Angeles’ hottest tables in 2009, Walter Manzke is leaving Church & State with the hope of starting his own restaurant in L.A. Squid Ink reports that Manzke will stay on for a few more weeks to train Joshua Smith, formerly chef de cuisine at Anisette until a December departure, who will fill Manzke’s shoes. While Church & State’s menu will remain the same, no details are emerging yet on Manzke’s restaurant plans, though a comment on Eater speculates that Joachim Splichal might be involved as a partner or investor. Not too hard to believe considering chef Walter met wife Marge in the kitchen of Patina. Wherever Manzke lands, expect L.A.’s food-obsessed to follow. Stay tuned as Manzke’s plans develop.
