Grilled Cheese Truck Hits the Streets This Summer

Roxy’s Gourmet Grilled Cheese, a truck run by local hardcore drummer Mike DiSabatino and his brother James, a recent Emerson graduate, hopes to launch this summer. “We’re looking to put a contemporary gourmet twist on our favorite comfort food,” James tells us. “We love grilled cheese because it’s a food we are familiar with, but we want to introduce different meats, cheeses, breads, and sauces that take it to a new level. We’re also working with a couple of Boston’s most amazing chefs to create some really amazing sandwiches with very nontraditional ingredients.”

James came up with the idea for Roxy’s while managing Mike’s band, The Carriers, on tour. “Mike would be frying up grilled cheeses every night. After a couple years, they got more and more elaborate, until it came to the point where we realized that Mike’s grilled cheeses were a true force to be reckoned with. We toyed with the idea of a grilled cheese truck, and since I graduated Emerson in September, we’ve been moving forward.” The DiSabatino brothers are in the process of building the truck and securing the necessary permits and hope to begin rolling around Boston, Cambridge, and Somerville this summer. New York, of course, already has a grilled cheese truck in the form of the Milk Truck. Now that Boston’s following suit, can a sweets truck a la Manhattan’s Dessert Truck pretty please be next?
