Chicago: A One-Dairy Town

Chicago’s second-to-last family-owned dairy, Elgin Dairy Foods, was sold to conglomerate Dean Foods this past fall, and now they’re closing up shop. Its labs were home to the invention of the first McDonald’s milkshake, they were instrumental in the creation of the McFlurry, and they were one of the first dairies to switch to corrugated cardboard from reusable cans for shipping. The only remaining dairy in town, Instantwhip Foods, is not a dairy in the traditional sense: as their name implies, they focus on whipped products, including produces whipping cream, wedding cake frosting, real and imitation sour cream, coffee whitener, and soft-serve ice cream.
