Earlier we connected news of ex-Flour + Water pizzaiolo Jon Darsky’s departure with the rumor of Farina’s impending pizzeria expansion at 18th and Valencia. Per the man himself, we’re setting the record straight that Darsky remains a free agent, and is looking to open his own Neapolitan, wood-fired pizza joint in an as-yet-undecided location — though probably not, as previously suggested, in the Mission, which he says is “way too saturated” with pizza already. More on the acclaimed dough-meister’s next move as we hear of it.
