Now that former Goose Island Clybourn chef John Manion is comfortably ensconced in his new gig at Branch 27, he’s opening up the brunch floodgates. This Sunday marks the opening foray of his (unsurprisingly) protein-heavy menu, anchored by an Italian sausage-stuffed omelette and rounded out with inspired riffs on breakfast classics like biscuits with braised rabbit gravy, chicken-fried pork belly with red-eye gravy and grits, and a flatbread decked out with with glazed country ham, fontina and egg. Those in the market for a sweet brunch are granted a scant two concessions — french toast with orange zest, and buckwheat pancakes — but really if you’re looking for a hangover sugar shock, John Manion isn’t your man.
