When the Court hotel closed its restaurant, Icon, back in July, we reported that chef Michael Wurster was staying on with W Hotels, but Gael Greene now brings word that he’ll be the new man in charge at Dean Poll’s Tavern on the Green (or, the Restaurant Formerly Known As Tavern on the Green or whatever it will be called). “The CIA-trained chef worked under Sottha Kuhn at Le Cirque,” Gael writes. “As well as for Alain Ducasse and Thomas Keller according to his bio. A locavore, of course, Wurster describes himself as a modern innovator paying homage to American classics.”
