Karyn Calabrese is Pretty Sure Veganism Could Have Prevented the Recession

On the eve of opening Karyn’s on Green (formerly Karyn’s Fresh Corner, the umpteenth installment in her growing vegan empire that’s slated to open in the West Loop later this month), Karyn Calabrese revealed to Time Out Chicago that she is pretty sure that if Americans had better eating habits, that whole financial apocalypse thing could have been avoided.

“If you’re not getting enough oxygen and nutrients in your cells, wouldn’t that kind of draw you in and make you not a humanitarian?” she pondered to TOC. “Not caring about your fellow man and your world?” Of course, since Karyn herself eats nothing if not virtuously, she’s managed to sidestep the decline that’s plagued the restaurant industry, claiming that her business is up at least 15 percent. She attributes this enviable figure to — seriously! — the fact that she inhabits an alternate reality. “My reality is not that we’re in a recession. My reality is that there’s an abundance in the universe.” [TOC]
