We were totally charmed by Chicago-area catering chef Jennifer Gavin when she appeared on season four of Hell’s Kitchen, so we’re particularly psyched by the news that she’s opened The Big Easy in the Hyde Park restaurant space at the corner of 55th and Hyde Park Boulevard, most recently vacated by the short-lived Hyde Park Barbeque & Bakery, and perhaps better known as the location of Orly’s.
Dish reports that Galvin’s been brought on by owner David Shopiro to open a Southern/Creole place — “cajun flair with a twist” is how Gavin put it when we got in touch with her. We imagine the place, which is currently unnamed, will angle to fill the gumbo void left by the shuttering of the much-loved Dixie Kitchen. But they’re keeping the bakery, because why the hell not.
