Delphine’s Sasha Lyon is not the only Restaurant Daniel alum opening shop in Los Angeles this week. Nathan McCall and Karen Yoo, who Squid Ink tells us both worked at Sona and, respectively, Café Pinot and Campanile, are providing Los Angeles with one of those deeply passionate, indie meat slingers we read about in San Francisco and New York all the time. The married duo opened McCall’s Meat & Fish Co. this morning on Hillhurst in Los Feliz, no doubt leaving the rest of the city a little envious.
The store plans on selling carefully sourced Certified Angus Beef and dry-aged steak cuts, Kurobuta pork belly roast, lamb, veal, locally-raised poultry, sushi grade tuna and hamachi, wild caught fish, and shellfish, among other specialized odds and ends. They will also make their own sausages and promise “unique cuts, ” including lamb legs, duck, squab, rabbit, as well as gourmet cooking spices, delicacies, and oils. Coffee is all Intelligentsia and the couple are even offering their best attempts to fulfill special requests. A sustainable specialty butcher is a boon to Los Feliz and the city, state, and nation at large. Let’s hope we see more of these on our streets.
