Balsan’s beet, hickory nut, and sheep’s cheese salad

So hot right now: hickory nuts. The woody cousin of the pecan is near-impossible to farm, so the wild-foraged li’l guys go for a hefty premium. And they’re apparently also perfect with root veggies: they’re used in roasted beet salads at both Naha and Balsan.
