Friend of the Earth and James Beard-awarded Chef Jimmy Schmidt will preview his new Morgan’s in the Desert this Friday at La Quinta Resort & Club. Schmidt is yet to reveal a full menu, which still promises proper food segregation to keep hot apps hot and cold apps cold, but has leaked out a couple of dishes that will be featured at Morgan’s first dinner on a premier menu that will extend to the January 26th grand-opening date.
In addition to a cheese bar and fresh fruit cocktails, a pan-roasted breast of duck & foie gras with caramelized two apple salad joins dishes like porcini-crusted Angus filet with grilled wild mushroom, Washington State wild coho salmon steak, and roasted split spiny Santa Barbara lobster. As we mentioned before, Schmidt is going mostly local and using traditional slow-cooking techniques at this dinner-only dining room.
