
Up in Healdsburg, Charlie Palmer has hired a Sonoma native as the new chef de cuisine at Dry Creek Kitchen. Dustin Valette, who started his career at Chateau Souverain in Geyserville, will join the Palmer fold after stints at Aqua, Bouchon, Hoku’s in Honolulu, and most recently VOX Restaurant and Wine Lounge near Las Vegas. Valette is planning a Thursday night “winter winemaker series” of $105 prix-fixe menus with wine pairings. Also look for some kind of surf and turf riff in January, and the ever-popular three-course Sonoma Neighbor Menu nightly.
