The judge for today’s round of Food 52’s online cookbook tournament, The Piglet, is our very own Grant Achatz. Achatz turns his attention to the very different books Canal House Cooking and Real Cajun, and unlike the other judges, ahem, who slaved over hot ovens to churn out wholly unpalatable cupcakes entirely by themselves, he turned the matter over to the Alinea kitchen.
“A good cook always knows his strengths, drawing from the resources that are available to him in order to get through the hectic days,” he writes about his process. “As it turns out I happen to have a brigade of 24 chefs at my disposal.
