Lydia Shire Doesn’t Chase Trends

Lydia Shire may be one of the few Boston chefs immune to trends, if an interview in the newest issue of Boston Magazine is any indication. “Locavore — what’s locavore?” inquires Shire when interviewer J.L. Johnson runs through a list of recent dining movements. Later, when asked if she might ever consider opening a casual restaurant like a clam shack, Shire calmly states “I need to surround myself with beauty — there is no question. I’m probably not the best person to do a clam shack.” After a season where practically every opening seems to be locavore comfort food, Shire’s words are a breath of fresh air.
