Emilia’s Opens Gradually in Berkeley

While Emilia’s Pizza is officially for business in Berkeley, the process of going from closed storefront to working pizzeria seems pretty gradual. Adam Kuban gave us a preview in Slice early last month, and in an update last week he quotes owner and Grimaldi’s vet Keith Freilich about finally getting around to an opening: “Well, my plan has always been to do a very soft opening and gradually increase capacity and hours and offerings.” To that end, Freilich has been making small batches of dough and only staying open till they run out (he opens at 5 p.m.). He’s also tweeting his limited toppings each night. Last night it was “regular and sausage & onion slices. Other toppings available: pepperoni, cherry tomatoes.” They closed at about 10 p.m. Tonight: Well, you’ll just have to keep an eye on things. [Slice]
