Bouchon Menu Visits the Capital of Foie Gras

Bouchon Bistro is doing this series where they offer occasional tasting menus from different regions of France. The newest one, which starts today, highlights the Gascony region on the southern Atlantic coast. Expect a lot of pate and seafood, as well as rich meat dishes to ward off the seaside chill. Most importantly, however, make sure you get the foie gras. Gascony is supposed to have some of the best in the world, and it’s a good bet chef Philip Tessier will do it justice. The three-course menu (replicated below) costs $60, with a $35 wine pairing available.

seared foie gras and duck confit rillettes with caramelized pears, Swiss chard and chestnut puree

bouchot mussels steamed with white wine, roasted sweet peppers, potatoes and Bayonne ham, served with grilled baguette

herb-roasted monkfish with coco beans, oven roasted tomatoes, haricots verts and eggplant with garden parsley butter

braised pork shank with red wine braised cabbage, pruneaux d’Agen, watercress leaves, and young turnips with Armagnac-pork jus
