First Look at Bill’s Bar and Burger, Serving ‘the Best Hamburger in New York’

Bill’s Bar and Burger opens tomorrow in the old Hog Pit space. From the beginning, BR Guest (which owns 675 Bar and Vento on the same block) pitched this as a humble neighborhood joint, but to generate some buzz, BRG honcho Stephen Hanson brought in Daniel Boulud, Lure chef Josh Capon, and other experts to try the $5.50 burger. Josh Ozersky compared the patty — made from a secret La Frieda blend via the “smashing” technique — to a Steak ‘n Shake specimen, and boldly proclaimed it the best burger in the city. Can it carry Bill’s to victory?

That remains to be seen. A Real Deal story about NYC’s ever multiplying burger joints points out that they come with their own set of problems, starting with the need for pricey custom venting, but we’re told Bill’s will be using a unique griddle that doesn’t create much smoke. It opens for dinner tomorrow, and starting Monday the menu you see below will be served (for dine-in and takeout) from noon onward (till 11 p.m. Sunday through Wednesday, till midnight on Thursday, and till 4 a.m. Friday and Saturday).
