
Mark Gold officially opens Eva tonight in the former Hatfield’s space on Beverly Blvd. A former chef at Joe’s and Leatherby’s Café Rouge, Gold finally has his own restaurant and this one is very close to his heart. He named Eva for his grandmother, plans to keep entrees under $20 for a neighborhood crowd, and so far has given a peek only to family and friends for small dinner parties, menu-less events that the chef plans to extend to every Sunday evening. In addition to seasonal, ingredient-driven menus, Gold plans to work on daily whims, improvising with market ingredients inspired while “driving to work and from my massive bookshelf.” Gold tells us he visited the fish market this morning at five a.m., scooping up fresh uni, plus a wild Japanese yellowtail that he will pair with an elephant plum compote and white soy and ginger tonight.
