Beer Chef Prepares Final Round at Cathedral Hill

When the Cathedral Hill Hotel closes at the end of October, it will take the Jack Tar Bar and Grill with it, putting Bruce “The Beer Chef” Patton out of a job. Before he goes, though, Patton has booked two more nights in the hotel’s banquet facilities to do two more of his signature beer dinners. The next one, scheduled for Oct. 2, will feature a menu crafted around beers from the Firestone-Walker Brewing Company. “The first thing I always do is taste the beer,” Patton told us about his process for creating these dinners. “I look for flavors in the beer and think about things that will match up with them so the beer and the food are a perfect marriage.” In this case, that puts pork belly with Hefeweizen and scallops with Walker’s Reserve. Check out the full menu with pairings below, and make your reservation as soon as possible. Patton says he’ll take reservations through next Wednesday when he orders the beer (ignore the Sept 10 deadline on the online menu), but he’d like to know in advance, thanks. The dinner costs an all-inclusive $75.
