
Fuego is now soft-open at Joie de Vivre’s new Hotel Maya in Long Beach under the guidance of Texas native Jessie T. Perez. He honed his southwestern and Mexican skills in San Antonio and Atlanta before coming here, and his menu reflects a creative spin on traditional dishes, like duck pastor tacos and guajillo-glazed lamb chops. Expect the lineup to shift based on seasonal ingredients, emphasizing coastal dishes and Yucatan flavors. For brunch, Perez will prepare different barbacoa each week. Fuego’s grand opening is next month, but we’ve got a preview of the dinner and brunch menus below.
