SPQR will likely go dark for a few weeks at later this summer to have work done, right after its two main chefs leave their posts. Chef de cuisine Chris Behr and executive sous-chef Huw Thornton will be leaving the restaurant once a replacement is found for Nate Appleman, Scoop reported today.
The two chefs didn’t indicate that Appleman’s departure had anything to do with their own, but both were initially on track to keep their same jobs after he left. Now Behr (who told Scoop he wants to “get back into the trenches” in the kitchen) is looking to get hired internationally and Thornton plans to stay in the Bay Area. Meanwhile, SPQR feels it’s in need of some kind of physical improvement, and will probably close at the end of August. Call us crazy, but can a one-and-a-half year restaurant really be so well-worn that it has to be closed for two weeks for refurbishment?
