Only in today’s burger-crazed age would you find mention of “shoulder clod” in a “breaking” news item, but then who can blame A Hamburger Today for being excited about the fact that Pat La Frieda, which had previously sold its ground meats only to restaurants, will now be offering three varieties via FreshDirect. Those don’t include the Minetta Tavern’s “Black Label” burger (dry-aged rib eye, skirt steak, and brisket), but they do include a blend of Creekstone Farms hormone-free brisket, a short-rib blend, and the familiar combo of brisket, chuck, and short rib. Clearly we’re going to have to conduct a taste test along the lines of our hot-dog experiment, featuring Marlow & Daughters, Japan Premium Beef, and other boutique butchers that have suddenly made home hamburger flipping a lot more glamorous.
