Devotees of Formaggio Kitchen’s Saturday barbecues might not be surprised; the Cambridge specialty store is featured in the July issue of Bon Appetit as one of the top ten new barbecue restaurants in the country. What’s surprising is the “new” part — Formaggio Kitchen has been grilling on Saturdays since the early 1990s, according to manager and cheese buyer Kurt Gurdal. What began as one employee making a few ribs out front for any curious customers has grown into a Saturday event with a full menu (it changes every week, but expect items like pulled pork, roast chicken, hot dogs, ribs, and cole slaw) and a long line of eager eaters.
