
Manhattan may have some of the world’s most expensive real estate, but restaurateurs there get off easy when it comes to labor costs. Hiring a server in San Francisco costs more than double what it does in New York, and more than four times what it does in Boston, according to Palio d’Asti owner (and Golden Gate Restaurant Association president) Dan Scherotter. Scherotter — whose organization has sued the city to halt its mandatory health care law — broke it down for Michael Bauer: A staff of 12 servers in San Francisco will run an employer $296,076. New York’s total for the same sized staff: $128,064. Boston’s? Just $73,219. The difference mostly has to do with California’s lack of tip credit, which allows employers in other states to deduct tips from their employees’ pay as long as the total reaches minimum wage.
