Composting has been freed from the shackles of tyrrany after the Illinois General Assembly passed a bill allowing restaurants to store and compress food scraps without a permit. Under the previous legislation, if a restaurant wanted to compost its leftovers, they were required either to get a permit (prohibitively expensive) or to use all their compost material on their own property (not easy to do if you’re one of the majority of restaurants that don’t have green space). Now restaurants and other commercial ventures are free to compost food scraps at will, and use them as they like. [The Local Beet]
