Former Momofuku partner Joaquin Baca hopes to make it on his own starting this month with the opening of Brooklyn Star in Williamsburg. In the latest issue, Rob Patronite and Robin Raisfeld analyze his penny-pinching start-up costs and use three words (Dr Pepper ribs) to entice us into wanting to see the rest of the southern-accented offerings.
