Terry White Leaves Union Trust; Kevin Sbraga Jumps In

Union Trust co-owner and chef Terry White has left the restaurant, the Insider reports. The flashy steakhouse was White’s big return to Philly since leaving for New York and Chicago in the mid-nineties, and a move toward independence (prior to UT, he opened location after location of Del Frisco’s, Sullivans and Lone Star steakhouses). It sounds less like an ugly breakup than a case of restlessness on White’s part — UT partner Ed Doherty says that White “truly loves the process of building restaurants, and is excited to go find his next opportunity to do so.” Kevin Sbraga (formerly of the Garces Restaurant Group) is already the new chef de cuisine at Union Trust. He’s there to “lighten” the menu and tweak the prices, but is this a sensible rebound? It’s hard to imagine kitchens with less in common than those of the GRG and a steakhouse (no matter how “modern”), and at the Top Chef casting call in March, Sbraga was hoping to open his own restaurant.
