Resto and Hill Country Go Whole Hog

Resto has always been one for pig parts, but this Saturday during dinner service it’ll celebrate its second anniversary by slow-roasting a Berkshire pig in a La Caja China Box and doling out 50 to 60 portions. Remember, the Spotted Pig went through 110 covers of Mangalitsa pork belly in an hour, so you may just want to call to pre-reserve your $30 plate, which includes a cranberry bean salad, pickled ramps, and (the good part) free Belgian beer. Whole pigs seem to be in the air these days (well, not literally in the air — that would be weird!). The Daddy reports that Hill Country is smoking 45-pound La Frieda suckling pigs every Tuesday at $22.50 per pound.
