The truck has only been around for three weeks, but cred is building for Honest Tom’s Taco Shop, with their breakfast tacos and fancy Stumptown coffee. Following a burst of press earlier this week, two vegetarian blogs are weighing in on Tom’s tacos.
• The Stumptown coffee is like a “condiment” here, and the near-famous $2.50 breakfast taco is a “scrambled egg and potato dance partnered with fresh guacamole and salsa.” [Living On The Vedge]
• On one of the Clark Park days, “while the wait was a bit long, the taco was delicious. The potatoes perfectly fried, the eggs still slightly soft, the guac and pico fresh in piquant.” [Veggicurious]
Okay, so the meat-free breakfast tacos get good marks. Anyone out there have a report on the meatier tacos?
