Tony Maws on Craigie On Main and the Pats

Craigie on Main’s Tony Maws may have been nominated for a Best Chef: Northeast Beard Award yesterday, but he’s still a humble guy. In an interview with The Leather District Gourmet, he admits to some opening glitches during the restaurants (very well-received) first month: “We were going left when we shoulda gone right, we were lucky to have the loyal staff that came with us; but one day I had to just stop and say ‘throw it all out.’” Now that Craigie On Main is fully up and running, Chef Maws can devote himself to his other concern: worrying whether Giselle is bad for the Pats.
