We knew you were wondering, so thought we’d pass along the word: The reason Chris Cosentino doesn’t serve lamb face in his offal-centric restaurant Incanto, is that he can’t. He recently told The Feedbag, “’I can’t legally buy skin-on face of lamb or calf legally in the state of California.’ The reason for the ban: a concern over scrapie, or mad lamb disease.”
